Congratulations, Chris!

In case you didn't already know (Chris has been shouting it from the rooftops!) Chris took his last final of his Masters program last week. That means as soon as the grades and diplomas are processed, he will officially have his MBA from the University of Utah.

He is done with school forever! It has been a long road (at least it felt that way to me), but he did it. I am just excited to have my husband back in the evenings every now and again. Congratulations, Chris. You are amazing and I love you to pieces!

Note: If you are a biker (as in road or mountain) give Chris a call. He's got some free time on his hands. :)

Jazz Game

Last Saturday we took our friends the Schanz's and the Hansen's to the Jazz vs. Suns game! We got to sit in a suite and eat tons of food and hang out. It was a blast! Plus the game was a nail-biter overtime win. Go Jazz!

(We even borrowed my mom's big old Yukon and carpooled to the game like one big happy family. It was so much fun hanging out in the car, I think we might do it again!)

Moab With The Boys

Last week Chris went to Moab with a bunch of his friends. They biked, hiked, camped, and had a great time! Here are a few pictures that document their fun.

Here's the whole gang, about to hit the biking trail. (They're all pointing to the spot in the picture where Jeremy should be.)

Here's the whole gang's sleeping setup. Well...not the whole gang. Chris was forced to set his sleeping bag up on the other side of camp because he snores. (I feel your pain, boys!)

Hiking with the whole gang in Arches. Isn't it beautiful?

Some of the gorgeous Moab scenery.

A photo of the time Chris got pulled over. (Luckily it was just a warning!)

One more picture of the boys biking.

Chris had a great time, and really enjoyed the little vacation from work and school. Thanks guys, for coordinating everything and making him go!

When Chris came home, his car and everything in it smelled of sweaty-dirty-man. Gross! So I made him bag up his laundry on the driveway and take it downstairs to throw right in the washer. A few days ago I was finishing folding some laundry, and I came across the pillowcase Chris took with him down to Moab. When he asked me what pillowcase he could take, I told him any of the ones in the linen closet were fine. Out of all of the pillowcases in the closet, this is the one he chose to take on a camping trip with a bunch of dudes:

Way to go, honey. I'm glad you're so secure with your manliness!

Menu Plan Monday

Yes, I'm feeling lazy this week. And all this snow isn't helping!

Monday:

Chicken salad

Tuesday:
Leftovers/fend for yourself. (Sorry Chris, I'm getting my hair done!)

Friday:
I think I might try this Chili Verde with the cheap meat I got at Target the last few weeks!

I saved some of the yummy Tomatillo Salsa I made last week for Chris when he got home from Moab. After two bites he handed it back to me. He's got some serious issues with cilantro (who doesn't love cilantro?!). So I'm officially taking requests for dinner guests/eating buddies on nights I cook with cilantro. You can come eat with me and we'll send Chris to Wendy's. The only requirement is stimulating conversation. :)

Tomatillo Salsa

I made Tomatillo Salsa last night to go with our enchiladas and it was so good! The recipe comes from Everyday Food Magazine. I'd post a picture for you but I've already eaten it all!

Tomatillo Salsa
1 lb tomatillos, husked and quartered
1/2 small red onion, chopped
1 c. cilantro, chopped
5-6 jalapeno slices (or to taste)
3 T lime juice
pinch salt

Toss all ingredients in your Cuisinart and mix. Enjoy with chips!

Things I Love Thursday - My Isabelt

A few month's ago I won a giveaway over at Forever and Always for an Isabelt. What is an Isabelt? It's basically a clear stretchy belt that no one can see. If you're like me and you wear long shirts that come down past the waist of your pants, you hate the "belt bulge" under your shirt when you wear a regular belt. It's the worst!

The Isabelt solved all my problems in that way! It's very low-profile, so no one can even tell you are wearing it. Plus, it eliminated my need to have all my jeans and pants altered to get rid of the "gap" in the back where they didn't fit my waist. All you ladies know what I'm talking about!

Needless to say, the Isabelt is one of the Things I Love!

Three Years And Counting

This past Friday was the 3-year anniversary of the day Chris and I got engaged. Sort of obscure, I know. We didn't do anything special to celebrate, since we usually celebrate the big day in July. But I will always remember that day 3 years ago.

Here's to many, many more years. Love you, Chris!
